Veg Biryani

Veg Biryani is a fragrant rice dish made with basmati rice, fresh vegetables, and aromatic spices. It's a royal dish enjoyed across India.

Ingredients:

Cooking Steps:

  1. Wash and soak basmati rice for 30 minutes.
  2. Saute onions, tomatoes, and spices in oil.
  3. Add vegetables and cook with curd and masala.
  4. Layer rice and vegetables, cook on low flame (dum method).
  5. Garnish with fried onions and coriander.

Cooking Terms:

Dum
A slow cooking method where steam cooks the food.
Marinate
Soaking food in a mixture of spices/yogurt to enhance flavor.

Chole Bhature

Chole Bhature is a classic Punjabi dish made with spicy chickpeas curry (chole) served with deep-fried fluffy bread (bhature).

Ingredients:

Cooking Steps:

  1. Boil chickpeas until soft.
  2. Prepare masala with onions, tomatoes, and spices.
  3. Add chickpeas and simmer until thick curry forms.
  4. Knead flour and curd into soft dough, rest for 2 hours.
  5. Roll and deep fry bhature, serve with chole and pickle.

Simmer
Cooking on low heat with gentle bubbling.
Knead
Pressing and folding dough to make it smooth and elastic.

Rasgulla

Rasgulla is a famous Bengali sweet made with chenna (cottage cheese) balls boiled in light sugar syrup until spongy and soft.

Ingredients:

Cooking Steps:

  1. Prepare chenna by curdling milk and draining water.
  2. Knead chenna until smooth and soft.
  3. Roll into small balls.
  4. Boil sugar syrup and add balls gently.
  5. Cook until rasgullas double in size and become spongy.

Cooking Terms:

Chenna
Soft paneer-like cheese obtained by curdling milk.
Syrup
A sweet liquid made from sugar and water.
